Your statement of attainment acts as a valid food safety certificate. Students will need access to a supervisor who has been in the food industry for more than 12 months to sign off on the practical aspects of the assessment.

SIRRFSA001 Handle Food Safely in a Retail Environment is a nationally recognised unit of competency that is a requirement for all food handlers in retail and fast food.

The course covers essential food safety practices, including proper storage, handling, and hygiene procedures, ensuring compliance with food safety regulations and preventing foodborne illnesses.

Upon completing this course, students will receive an official Statement of Attainment from CTA Training Specialists. This statement of attainment doubles as a Food Safety Supervisor certificate for those appointed to that position.

A business’s Food Safety Supervisor must be generally available daily to manage food handlers and ensure that the company complies with Food Safety laws.
Their key responsibilities include:

  • Recognise and deal with potential food safety hazards.
  • Understand and share knowledge about foodborne illnesses.
  • Supervise and advise other food handlers within the business.
  • Be available during operating hours to handle queries from other food handlers and the local government
  • that licensed the food business.
  • Foster a culture where food safety is a top priority.

This course is delivered online and takes 4-6 hours to complete. It doesn’t have to be done in a single setting and can be completed over 3 months.

The course includes both online and practical assessments. The online assessments are quizzes that can be taken as many times as required. The practical assessment must be completed with a supervisor who must complete and sign your supervisor report.

A supervisor must have 12 months of experience working with food and can be:

  • Someone you work with
  • Someone you have worked with in the last 12 months
  • Someone you volunteered with.

It is essential to ensure that the supervisor completing your report observes you doing everything listed on the report on three separate occasions.

We understand that finding a supervisor can be challenging if you are new to the industry or country. If this is the case, you can do the following:

  • Ask a friend or family member in the food industry to sign off on your practical assessment. Just ensure they have at least 12 months of experience in the industry.
  • Get a list of local food-based charities from the council. Volunteer there and get one of the regular volunteers to sign off on your practical assessment.

For appointed Food Safety Supervisors:

  • If you are an appointed food safety supervisor, you will need to refresh your skills (retake the course) every five years.

For all others:

  • Your statement of attainment does not expire, and therefore, there is no need to refresh your skills.

Follow food safety program.

  • Access information from food safety program to ensure food handling is completed safely.
  • Monitor food safety according to organisational processes and document as required.
  • Control identified food safety hazards relevant to operations.
  • Take corrective action within scope of job responsibility when non-compliance and food safety hazards are identified and report to relevant personnel as required.
  • Record food safety information, including equipment breakdowns, according to food safety program.

Store and handle food safely.

  • Receive and transport food supplies to appropriate storage areas promptly, safely and without damage.
  • Store and display food in environmental conditions that protect against contamination and maximise freshness, quality and appearance.
  • Store food at controlled temperatures and ensure that food items remain at correct temperature during storage and display.
  • Use cooling and heating processes that support microbiological safety of food.
  • Identify and take action to remove potentially unsafe food safety processes or situations.
  • Change or sanitise food-handling implements between handling different food products to avoid cross-contamination.
  • Mark and keep separate from other foodstuffs any food identified for disposal until disposal is complete.
  • Dispose of food promptly to avoid cross-contamination.

Maintain personal hygiene standards.

  • Follow hand washing procedures to minimise the risk of contamination.
  • Wear appropriate clothing and footwear and maintain uniform cleanliness standards.
  • Secure hair and cover all open wounds to minimise risk to food safety.
  • Report any health issues or illness to the appropriate personnel.

Maintain equipment and work area.

  • Clean and sanitise equipment, surfaces and utensils following organisational procedures.
  • Identify and report cleaning, sanitising and maintenance requirements.
  • Dispose of or report chipped, broken or cracked food handling utensils.
  • Take measures within scope of responsibility to ensure food-handling areas are free from insects, pests and vermin and report incidents of animal or pest infestation.

The SIRRFSA001 online course takes approximately 4-6 hours to complete.

Students can complete this course in multiple settings within 3 months of enrolment.

Once the assessments are complete and submitted, CTA will, if possible, provide you with an official Statement of Attainment on the same day. See terms and conditions for more information on same-day certificates.

Your SIRRFSA001 statement of attainment does not expire, and you are therefore not required to refresh your skills.

However, if you are an appointed food safety supervisor at your workplace, you will need to refresh/redo the course every 5 years.

Your SIRRFSA001 Statement of Attainment is valid in all states as it is a nationally recognised competency. In NSW, individuals are required to have a NSW Food Authority

Orange & Blue Certificate in addition to the statement of attainment to be locally compliant. You can get this by completing the NSW SIRRFSA001 course.

We recommend that individuals take the course for the state they wish to work in, as courses often provide additional information about local laws and regulations that might affect the job.
