The HLTFSE007 Oversee the Day-to-Day Implementation of Food Safety in the Workplace course is designed for individuals in supervisory or managerial roles within the health and community service industry.

This course is ideal for those responsible for ensuring that food safety standards are consistently maintained in their workplace. This unit of competency, along with ‘HLTFSE001 Follow Basic Food Safety Practices’ and ‘HLTFSE005 Apply and Monitor Food Safety Requirements’, makes up the HLTSS00061 Food safety supervision skill set for community services and health industries.

This course covers critical topics about ensuring your workplace follows safe food practices. Key focus areas include:

Supporting colleagues to implement the food safety program

  • Communicate food safety requirements and procedures to others in the workplace
  • Support people in the food area to meet food safety requirements.
  • Instruct food handlers on food safety program and legal requirements for completing food safety records.

Controlling food safety in the workplace

  • Identify processes and procedures that have or could result in a food safety breach.
  • Implement procedures and controls for responding to and preventing food safety breaches.
  • Investigate actual and potential non-conformance and complaints from clients relating to food safety.
  • Respond to non-conformance and follow procedures to identify, separate and/or recall non-conforming food.
  • Develop or revise procedures to support food safety control and prevent further breaches.
  • Communicate all additional and/or revised processes and procedures to food handlers.

This course is delivered online and can be completed at your own pace. Students have 3 months to complete it and can do it in multiple settings if required.

This unit of competency has both practical and online assessments. The online assessments are quizzes that can be completed through the learning management system.

There are 2 practical assessments to be completed as part of this unit of competency.

Supervisory report:

You must complete three shifts (of a minimum of three hours each) and undertake specific tasks under the supervision of a supervisor. The tasks are listed in the supervisory report that your supervisor must observe you and sign it off.

The shifts must be done in a kitchen-equipped workplace. This could be a hospital, childcare centre, aged care centre, or community food service. If you aren’t currently employed, you can volunteer at a food-based charity to complete your practical assessments.

In most cases, a supervisor is your direct supervisor with food experience at work. If such a person is not available, it can be one of the following:

  • A manager of a food business
  • A person with 12 months of commercial food experience
  • A food safety supervisor or chef
  • Someone with one of the following qualifications:
    • HLTSS00061 – Food safety supervision skill set – for community services and health industries or
    • SITSS00069 – Food Safety Supervision Skill Set.

Once submitted, our staff will contact your supervisor to verify the report.

Manage a Food Safety Meeting

You must run a food safety meeting at your workplace and submit the meeting minutes as part of this unit of competency. The meeting must include three people, including yourself, and you must address at least three food safety topics.

Your ‘HLTFSE007 Oversee the Day-to-Day Implementation of Food Safety in the Workplace’ statement of attainment does not expire and is valid throughout Australia. You are not required to complete a refresher course.

If this unit of competency is completed as part of the HLTSS00061 Food Safety Supervision Skill Set, it must be renewed every five years.
