Students who are completing this course will need access to a supervisor who has been in the food industry for more than 12 months to sign off on the practical assessment within this course.

The SITXFSA006 Participate in Safe Food Handling Practices course is recommended for all food handlers who work in hospitality. This includes cooks, chefs, kitchen hands, bartenders, and wait staff. Anyone who handles food or works with food-contact surfaces such as cutlery, glasses, plates, etc., can benefit from this training.

This course is also a part of the SITSS00069 Food Safety Supervisor training package. If you have previously completed your SITXFSA005 Use Hygienic Practices for Food Safety in the last five years, you can complete this course to get your Food Safety Supervisor Certificate. If you do not have a current (less than 5 years old) Level 1 Food Safety Certificate, complete the Food Safety Supervisor training package to get your Food Safety Supervisor Certificate.

Food safety regulations around Australia are set up nationally by the Australia New Zealand Food Standards Code. However, some states have additional requirements to get this certificate or the Food Safety Supervisor certificate.

This course is valid in all states other than NSW, including Queensland, Victoria, Western Australia, South Australia, the Australian Capital Territory, the Northern Territory, and Tasmania.

If you are working in NSW, you will need to do the NSW Level 2 Food Handling Course.

The key learning outcomes from this course include:

  • Understanding food safety regulations and compliance requirements
  • Knowledge of safe food handling and storage techniques

  • Skills in implementing food safety procedures and practices
  • Proficiency in cleaning and sanitising food contact surfaces
  • Techniques for preventing cross-contamination
  • Effective communication of food safety information and practices to colleagues
  • Monitoring and maintaining food safety standards in the workplace

In NSW, there are 4 additional key focus areas, including:

  • Safe egg handling
  • Allergens management
  • Cleaning and sanitation
  • Food Act offences

To complete the course, students must undertake a practical assessment with a supervisor who can complete and sign the supervisor report. The supervisor must have 12 months of experience working with food and can be someone who you have worked with or volunteered with within the last 12 months.

It is essential to ensure that the supervisor completing your report observes you doing everything listed on the report on three separate occasions.

Finding a supervisor can be challenging if you are new to the industry or country. If this is the case, you can do the following:

  • Ask a friend or family member in the food industry to sign off on your practical assessment. Just ensure they have at least 12 months of experience in the industry.
  • The council has a list of local food-based charities. Volunteer there and have one of the regular volunteers sign off on your practical assessment.

Upon completing this course, you will receive an official Statement of Attainment from CTA Training Specialists, which also acts as your Level 2 Food Handlers Certificate. As

CTA is an approved training provider, your Statement of Attainment is proof of endorsement and is recognised across Australia.

We recommend you supply a copy of your certificate to your employer and keep a digital version on hand when at work.

While this is a nationally recognised certificate, it is not valid for work in NSW. For NSW, you will need to complete the NSW-specific Level 2 Food Handling course.

Your SITXFSA006 Participate in Safe Food Handling Practices Statement of Attainment does not expire. While this course has no specific timeframe or refresher period, it is best practice to refresh your training regularly.

If this course is completed as part of the Food Safety Supervisor Training Package, it needs to be renewed every 5 years to keep your Food Safety Supervisor certification current.

Same Day SITXFSA006 Certificates

CTA will issue your Statement of Attainment on the same day as when you submit your assessments if the following conditions are met:

  • Your USI number has been verified.

FAQs

SITXFSA006 refers to a nationally recognised unit of competency, ‘SITXFSA006 Participate in Safe Food Handling Practices’. It is recommended that all food handlers in the hospitality industry complete this course to ensure their knowledge of safe food handling is current. This unit of competency is most commonly completed as part of the SITSS00069 Food Safety Supervision Skills Set training package.

Food Safety Supervisor Statement of Attainments must be issued within the last 5 years and must be renewed every 5 years by completing a Food Safety Supervisor Course. The SITXFSA006 certificate does not expire however, it is recommended that you refresh your knowledge regularly to stay current with best practices and local legislation.
If completed as part of the Food Safety Supervision skill set, it must be renewed every 5 years.

SITXFSA006 is the newer version of SITXFSA002. Anyone requiring a Level 2 Food Safety Certificate must now complete SITXFSA006. Those who have previously completed the superseded unit (002) need not undertake the new one to keep their competency active.

SITXFSA006 online course costs $75 for QLD, VIC, WA, SA, NT ACT and TAS. The course costs $99 for NSW as it includes four additional key focus areas required by the NSW Food Authority.

Yes, the SITXFSA006 Participate in Safe Food Handling Practices course can be completed online. It takes approximately 6-9 hours to complete and can be done in multiple sittings over 3 months.

The elements and performance criteria of SITFSA006 Participate in Safe Food Handling Practices are as follows:

Follow food safety program

  • Access and use relevant information from organisational food safety program.
  • Follow policies and procedures in food safety program.
  • Control food hazards at critical control points.
  • Complete food safety monitoring processes and complete documents as required.
  • Identify and report non-conforming practices.
  • Take corrective actions within scope of job responsibility for incidents where food hazards are identified.

Store food safely

  • Select food storage conditions for specific food type.
  • Store food in environmental conditions that protect against contamination and maximise freshness, quality and appearance.
  • Store food at controlled temperatures and ensure that frozen items remain frozen during storage.
  • Ensure food is stored to avoid cross-contamination of ingredients.

Prepare Food Safely

  • Use cooling and heating processes that support microbiological safety of food.
  • Monitor food temperature during preparation using required temperature measuring device to achieve microbiological safety.
  • Ensure safety of food prepared, served and sold to customers.
  • Prepare food to meet customer requirements, including actions to address allergen requests by customers.

Provide safe single use items

  • Store, display and provide single use items so they are protected from damage and contamination.
  • Follow instructions for items intended for single use.

Maintain a clean environment

  • Clean and sanitise equipment, surfaces and utensils.
  • Use appropriate containers and prevent accumulation of garbage and recycled matter.
  • Identify and report cleaning, sanitising and maintenance requirements.
  • Dispose of, or report damaged or unsafe eating, drinking or food handling utensils.
  • Take measures within scope of responsibility to ensure food handling areas are free from animals and pests and report incidents of animal or pest infestation.
