Students who are completing this course will need access to a supervisor who has been in the food industry for more than 12 months to sign off on the practical assessment within this course.
This certificate is required for food handlers in any organisation with kitchen or food preparation areas, including restaurants, cafes, clubs, hotels, bars, tour operators, attractions, event catering, educational institutions, aged care facilities, correctional centres, hospitals, defence forces, cafeterias, kiosks, canteens, fast food outlets, residential catering, and transport catering.
It applies to those who handle food or food contact surfaces, such as cooks, chefs, caterers, kitchen stewards, kitchen hands, bar staff, and food and beverage attendants.
Food safety regulations around Australia are set up nationally by the Australia New Zealand Food Standards Code. However, some states have local legislation and knowledge requirements. For this reason, students must undertake the course meant for the state where they intend to work.
The key learning outcomes from this course include:

- Skills in safe food handling and storage techniques
- Ability to identify and manage food safety hazards
- Proficiency in cleaning and sanitising food contact surfaces

- Competence in implementing food safety policies and procedures in the workplace
To complete the course, students must undertake a practical assessment with a supervisor who can complete and sign the supervisor report. The supervisor must have 12 months of experience working with food and can be someone who you have worked with or volunteered within the last 12 months.
It is essential to ensure that the supervisor completing your report observes you doing everything listed on the report on three separate occasions.
Finding a supervisor can be challenging if you are new to the industry or country. If this is the case, you can do the following:
- Ask a friend or family member in the food industry to sign off on your practical assessment. Just ensure they have at least 12 months of experience in the industry.
- The council has a list of local food-based charities. Volunteer there and have one of the regular volunteers sign off on your practical assessment.
Upon completing this course, you will receive an official Statement of Attainment, also known as the Level 1 Food Safety Certificate, from CTA Training Specialists. As CTA is an approved training provider, your Statement of Attainment is proof of endorsement.
We recommend you supply a copy of your certificate to your employer and keep a digital version on hand when at work.
Your SITXFSA005 Use Hygienic Practices for Food Safety Statement of Attainment does not expire. While this course has no specific timeframe or refresher period, it is best practice to refresh your training regularly.

Same Day Level 1 Food Handlers Certificates
CTA will issue your Statement of Attainment on the same day as when you submit your assessments if the following conditions are met:
- All assessments submitted before 4 pm AEST
- You pass your assessments
- Your USI number has been verified.

FAQs
SITXFSA005 refers to a nationally recognised unit of competency, ‘Use Hygienic Practices of Food Safety’. All food handlers in the hospitality industry must hold a certificate or official Statement of Attainment for this unit of competency. In industry, it is often referred to as Level 1 Food Safety Certificate, Level 1 Food Hygiene Certificate and Level 1 Food Handlers Certificate.
Each Food Safety Certificate has its own expiry and refresher timeframe. The SITXFSA005 Use Hygienic Practices of Food Safety certificate does not expire and is valid indefinitely. However, it is recommended that you refresh your knowledge regularly to stay current with best practices and local legislation.
SITXFSA005 is the newer version of SITXFSA001. Anyone requiring a Level 1 Food Safety Certificate must now complete SITXFSA005. Those who have previously completed the superseded unit (001) need not undertake the new one to keep their competency active.

The elements and performance criteria of SITFSA005 Participate in Safe Food Handling Practices are as follows:
Follow hygiene procedures and identify food hazards
- Follow organisational hygiene procedures.
- Report unsafe practices that breach hygiene procedures promptly.
- Identify food hazards that may affect the health and safety of customers, colleagues and self.
- Remove or minimise the hygiene hazard and report as appropriate for follow-up.
Report any personal health issues
- Report personal health issues likely to cause a hygiene risk.
- Report incidents of food contamination resulting from personal health issues.
- Cease participation in food handling activities where own health issue may cause food contamination.
Prevent food contamination
- Maintain clean clothes and use required personal protective equipment, including appropriate bandages and dressings where required.
- Prevent food contamination from clothing and other personal items.
- Prevent unnecessary direct contact with ready to eat food.
- Ensure hygienic personal contact with food and food contact surfaces.
- Use hygienic cleaning and sanitising practices that prevent food-borne illnesses.
Prevent cross-contamination by washing hands
- Wash hands at appropriate times and follow hand washing procedures consistently.
- Wash hands using appropriate facilities.
