About the HLTFSE001 Course

The HLTFSE001 Follow Basic Food Safety Practices course is designed to equip individuals with the foundational knowledge and skills to maintain food safety in various food service environments.

It is ideal for those starting their careers in aged care, childcare, or other health and community industries. This unit of competency along with ‘HLTFSE005 Apply and monitor food safety requirements’ and ‘HLTFSE007 Oversee the day-to-day implementation of food safety in the workplace’ make up the HLTSS00061 Food safety supervision skill set for community services and health industries.

This course covers various topics essential for understanding and implementing basic food safety practices. Key focus areas include:

Comply with personal hygiene standards as required by the food safety program:

  • Follow personal hygiene procedures.
  • Report health conditions and/or illness and follow organisation procedures for continuing participation in food services.
  • Follow organisation requirements for wearing bandages and dressings.
  • Wear appropriate clothing, personal protective clothing and footwear and maintain cleanliness to avoid contamination.
  • Follow hand washing procedures and use required facilities.

Contribute to the cleanliness of food handling areas according to the food safety program:

  • Maintain the workplace in a clean and tidy order to meet workplace requirements.
  • Comply with workplace measures to prevent pests from entering food premises.
  • Identify and report indicators of pest presence.

Follow the food safety program:

  • Handle and store food according to the food safety program.
  • Store, use and dispose of single-use items appropriately to avoid damage and contamination.
  • Keep food for disposal separate and follow procedures for food disposal
  • Identify and report processes and practices inconsistent with the food safety program.
  • Take corrective action within your level of responsibility.
  • Report any corrective action to the supervisor per legislative and organisation documentation requirements.

This course is delivered online and can be completed at your own pace. Students have 3 months to complete it and can do it in multiple settings if required.

This unit of competency has both practical and online assessments. The online assessments are quizzes that can be completed through the learning management system. To complete your practical assessments, you will need a supervisor to observe you and sign off on a supervisory report three (3) times on three (3) shifts. Each shift must be after your course enrolment date and at least three (3) hours long.

The shifts must be done in a kitchen-equipped workplace. This could be a hospital, childcare centre, aged care centre, or community food service. If you aren’t currently employed, you can volunteer at a food-based charity to complete your practical assessments.

In most cases, a supervisor is your direct supervisor with food experience at work. If such a person is not available, it can be one of the following:

  • A manager of a food business
  • A person with 12 months of commercial food experience
  • A food safety supervisor or chef
  • Someone with one of the following qualifications:
    • HLTSS00061 – Food safety supervision skill set – for community services and health industries or
    • SITSS00069 – Food Safety Supervision Skill Set.

Once submitted, our staff will contact your supervisor to verify the report.

Your HLTFSE001 Follow Basic Food Safety Practices statement of attainment does not expire and is valid throughout Australia. You are not required to complete a refresher course.

If this unit of competency is completed as part of the HLTSS00061 – Food safety supervision skill set – for community services and health industries, it must be renewed every five years.

FAQs

HLTFSE001 refers to the nationally recognised unit of competency HLTFSE001 – Follow Basic Food Safety Practices. It is an entry-level unit for those wanting to work in a food-handling role within the health and community industries. This includes aged care and childcare.

Your HLTFSE001 Statement of Attainment does not expire, and you are not required to renew it. However, if this competency is part of the HLTSS00069 Food Safety Supervision Skill Set training package, it must be redone every five years to keep your food safety supervisor certificate current.

Both units of competencies are entry-level courses for safe food handling. SITXFSA005 is for tourism, hospitality and catering workers, and HLTFSE001 is for health and community industry workers in areas such as community services, health food services, aged care and childcare.

HLTFSA001 is a nationally recognised competency that is valid in all states if undertaken through an approved training provider such as CTA Training Specialists.

The course for HLTFSE001 Follow Basic Food Safety Practices can be completed online. CTA offers students 3  months from enrolment to complete the course. There is no requirement to finish the course in one setting. You can easily save your progress and pick up where you left off.
