To complete the practical assessments, you will be required to work 3 shifts (of minimum 3 hours each) after your course enrollment date, have a supervisor observe you, and sign off on the supervisory report.
Same-Day Certificates
CTA will issue your Statement of Attainment on the same day as when you submit your assessments if the following conditions are met:
- All assessments submitted before 4 pm AEST
- You pass your assessments
- Your USI number has been verified.

Visa holders and international students (excluding subclass 500 if you are on a subclass 500 visa you need to find a Training Orgnaisation which is CRICOS Registered ) can undertake this course through CTA Training Specialists. About the HLTFSE005 Course
The HLTFSE005 Apply and Monitor Food Safety Requirements course is designed for individuals seeking advanced knowledge and skills in food safety management.
It is ideal for those in supervisory or managerial roles who are implementing the food safety program. This unit of competency, along with ‘HLTFSE001 Follow Basic Food Safety Practices’ and ‘HLTFSE007 Oversee the Implementation of Food Safety in the Workplace,’ makes up the HLTSS00061 Food safety supervision skill set for community services and health industries.
This course covers critical topics about ensuring your workplace follows safe food practices. Key focus areas include:
Implementing and monitoring the food safety program
- Identify food safety hazards and respond to unsafe food and complaints.
- Monitor and control food safety hazards per food safety program requirements.
- Follow procedures to identify and separate products which is or may be non-conforming and/or implement other necessary corrective action.
- Promptly report non-conformance where food safety control requirements are not met.
- Record results of monitoring and maintain records in accordance with food safety program requirements.
Assist in the identification of breaches of food safety procedures
- Assist in identifying potential and actual unmet food safety requirements.
- Identify practices or processes in your work that could result in unsafe food.
- Participate in investigating and reporting on hazardous food as identified by internal monitoring and/or customer complaints.
This course is delivered online and can be completed at your own pace. Students have 30 days to complete it and can do it in multiple settings if required.
This unit of competency has both practical and online assessments. The online assessments are quizzes that can be completed through the learning management system. To complete your practical assessments, you will need a supervisor to observe you and sign off on a supervisory report three (3) times on three (3) shifts. Each shift must be after your course enrolment date and at least three (3) hours long.
The shifts must be done in a kitchen-equipped workplace. This could be a hospital, childcare centre, aged care centre, or community food service. If you aren’t currently employed, you can volunteer at a food-based charity to complete your practical assessments.
In most cases, a supervisor is your direct supervisor with food experience at work. If such a person is not available, it can be one of the following:
- A manager of a food business
- A person with 12 months of commercial food experience
- A food safety supervisor or chef
- Someone with one of the following qualifications:
- HLTSS00061 – Food safety supervision skill set – for community services and health industries or
- SITSS00069 – Food Safety Supervision Skill Set.
Once submitted, our staff will contact your supervisor to verify the report.
Your HLTFSE005 Apply and Monitor Food Safety Requirements statement of attainment does not expire and is valid throughout Australia. You are not required to complete a refresher course.
If this unit of competency is completed as part of the HLTSS00061 Food Safety Supervision Skill Set, it must be renewed every five years.
