Recipe: Poached Pears in Spiced Brown Sugar Syrup

Ingredients

1 vanilla bean, halved lengthways 1 cinnamon stick 1/8 teaspoon ground nutmeg 1 cup firmly packed brown sugar 2 firm pears, peeled  

Method

Step 1 Place 4 cups cold water, vanilla, cinnamon, nutmeg and sugar in a saucepan over medium-high heat. Bring to the boil. Reduce heat to medium-low. Step 2 Add pears. Cook, partially covered, turning occasionally, for 18 to 20 minutes or until pears are just tender. Remove from heat. Allow pears to cool in syrup, turning occasionally. Using a slotted spoon, transfer pears to a plate. Step 3 Return syrup to medium-high heat. Bring to the boil. Boil for 10 minutes or until liquid is reduced by one-third. Serve pears with sugar syrup and cream or ice-cream.
