(Serves 4)
Ingredients
- 4 x Mrs Macs Premium Steak Pies
- 600gm royal blue potatoes peeled and cut into small dice sized pieces
- 100ml cream
- water
- 20gm unsalted butter
- 10 gm chives
- For pie: glaze-1 egg & 25ml milk
- Sea salt and cracked black pepper to taste
- 100gm green peas-frozen
- 15gm fresh mint leaves
- 5ml lemon juice
- 10gm salted butter
- 25ml sour cream
Method
Step 1
Pre-heat a fan forced oven to 170ºC
Step 2
For an optimum result, remove the pie from the freezer for 1 hour before cooking
Step 3
Mix egg and milk together and brush onto the pie top
Step 4
Sprinkle the pie top with sea salt and cracked black pepper
Step 5
Bake the pie for 40-45 minutes till pastry is crisp and flaky
Step 6
While the pie is cooking, add the potatoes to a pot and cover with water, for approximately 15-20 minutes
Step 7
Drain the water and add in the cream & butter, continue cooking on low heat till soft
Step 8
Mash potatoes with a wooden spoon, add seasoning, beat till smooth, finish with chopped chives before serving
Step 9
In a separate pot bring salted water to the boil and blanch the frozen peas for approximately 3 minutes
Step 10
Drain the peas (reserve a little of the hot liquid) and add to a blender with fresh mint leaves, lemon juice, butter and sour cream. Blend to a smooth paste and season to taste (if a little thick, thin with some of the reserved cooking liquid)
Assembly
Step 1
Place a good size serve of creamy mash potato on to a warm plate
Step 2
Place the pie into the side of the mash so when the pie is cut the sauce will pour out onto the mash
Step 3
Add a scoop of the mushy peas
Step 4
Add a good commercial gravy if you want to add more sauce
