Thanks to everyone who attended the CTA Chef Forum ‘Raising The Steaks’ at the recent HGA.  This was a great event with chefs coming far and wide including those from Mossman, north of Cairns.

CTA Commercial Cookery Trainers, Paolo Pavia and Aletia Ramscar presented on the importance of quality versus quantity and what your members want – VALUE!

CTA General Manager, Jonathan Waller introduced CTA’s partnership with Symbio Alliance, the largest food testing laboratory in Queensland.  This partnership allows CTA to add value to our Apprentice Chef program by incorporating butchery units of competence into the Apprentice Chef’s learning and development.

This equips our apprentices with a greater appreciation for quality cuts of meat and portion control. CTA apprentices will learn how to cut meat from the bone, reduce wastage, improve portion control and ultimately reduce costs for their employers, improving the bottom line.
