Ovens in commercial kitchens

Interested in a career in commercial cookery?Ovens within commercial kitchens come in many shapes and sizes, and when completing a Certificate III in Hospitality (Commercial Cookery), our experienced chefs will be on hand to show you how to effectively use an oven. Sounds like an easy challenge, but using an oven effectively is essential to perfect cooking; not setting the right temperature could ultimately ruin a dish.

An oven is an insulated, heated box and/or chamber. Food is placed in the oven at the appropriate temperature, and the hot air that is radiated around the oven cooks what has been placed inside.

Before you proceed and cook your food, you must ensure that you have your oven on the correct settings and temperature, as different temperatures cook the food differently. Also, oven should be pre-heated and must be switched on far enough in advance, so that the oven is at the appropriate temperature before placing the food inside to cook.

When working with ovens, it is vital that all safety measures are taken to ensure that staff will be safe. This is as ovens are hot and can cause injury. When you take food from the oven, you should always ensure that you are taking your time – don’t rush – and you are using a dry oven cloth to handle the item. You should also have your sleeves down.

Ovens also must be regularly cleaned to ensure that there is no build-up of baked food, this is as burnt food that has been continuously cooked within the oven can cause odours and transfer to other foods that are cooking, tainting the overall taste. Food spillages within an oven that are not cleaned up can also attract mice and insects.
